Moving Beyond the Basics: Advanced Allergen Management Strategies for Food Preparation and Service

Food allergies impact more Canadians than ever before, and members increasingly expect confidence, transparency, and consistency when dining at their clubs. As a result, allergen management has become an essential component of both operational excellence and member service.

In this high-level interactive 90-minute session, participants will explore the realities of managing allergens in club environments and examine practical strategies that can strengthen both safety and member confidence. Through facilitated discussion, case studies, breakout conversations, and real-world examples, attendees will gain valuable insights into where allergen-related risks commonly arise and how clubs can build more reliable systems to reduce those risks.

The session will explore common operational challenges, including supplier changes, recipe modifications, staff turnover, event service complexities, and communication breakdowns. Participants will examine how these issues contribute to risk, while also discussing practical approaches to improving consistency across both front-of-house and back-of-house operations.

Key areas of focus will include understanding today’s food allergy landscape and its impact on member expectations, strengthening ingredient verification and recipe standardization, improving cross-contact prevention practices, and enhancing communication between staff and members. The session will also explore how systems and technology can support consistency, reduce reliance on memory, and improve the management of allergen-related information across the member experience.

Designed for club leaders, food and beverage professionals, chefs, and operational teams, this session will provide practical ideas and actionable takeaways that can be implemented immediately to strengthen allergen management practices, improve operational consistency, and build greater member confidence.

The session will be led by Kate Reid, Director of Foodservice, Food Allergy Canada.

Kate Reid leads foodservice strategy and initiatives at Food Allergy Canada. She brings over 10 years of experience in risk management, specializing in food safety and health and safety, and has worked closely with industry and government partners. She is passionate about improving safety in foodservice and supporting Canadians living with food allergies.
